California Roll in a Bowl
This salad is beyond awesome. I found the recipe over on SparkRecipes (the recipe can be found here) and was intrigued. I always order a California Roll when I go to a sushi restaurant so I knew I’d love this salad – just didn’t know I’d love it this much! I have made this bad boy 3 times this week… I might be slightly obsessed. If you enjoy a nice salad full of veggies… or you love California Rolls… you seriously HAVE to try this. Actually, no matter what, you need to eat this salad!
Ingredients:
Salad
- 1 cup cooked brown rice
- 1 head of lettuce
- 8 ounces of cooked shrimp, chopped
- 1 cucumber, peeled, seeds cut out, sliced
- 1 carrot (or lots of baby carrots), sliced
- 1 avocado, chopped
Dressing
- 3 tablespoons rice wine vinegar
- 1 tablespoon soy sauce
Toppings
- Sesame seeds
- Nori, toasted and chopped
I made only a couple changes from the original recipe and I just adore it. The one thing I left out (that I wish I didn’t have to) was the wasabi powder added to the dressing. I think it would be absolutely delicious, but I couldn’t find any at my local stores. I have ordered some online though, so I will definitely try it soon!
Here are a couple tips to make this salad better and easier. First, use leftover rice. Freshly cooked rice, especially brown, will be much stickier. That’s normally fine, but for a salad, it won’t go very well. Second, cook your shrimp in a little bit of rice vinegar and ginger powder. This worked great for me as I love ginger, but didn’t want it to be overpowering. Also, you can buy presliced carrots if you want to make this easier, as well as seedless cucumbers. It doesn’t take too long to cut everything up though and it is worth the effort!
Chop your lettuce and seperate it among 4 bowls. I used a plate because I made a very large serving – actually about 1 and a half serving size. It was super filling though, so I will be making a normal size serving from now on! Top each bowl of rice with 1/4 cup of your rice.
Next, add your chopped shrimp…

Then add your veggies!
Whisk together the dressing ingredients and then divide it evenly between your four bowls. Top with sesame seeds and chopped nori (seaweed.. which I didn’t have on hand either but it’s on the way!)
This salad is so delicious! It seriously tastes just as good as a California Roll – I was totally impressed with it! I will be making this again and again and again.
