Chicken Caesar Pasta Salad
My favorite thing to order (actually, now it’s the only thing I order!) at Cheddars is their Chicken Caesar Pasta Salad. It is beyond delicious! I’ve probably had it 10 times, but not until the last time I had it did it occur to me that it would be super simple to duplicate. So, I snagged a few ingredients from the store and my very own Chicken Caesar Pasta Salad was born! It’s very simple and very filling, thanks to the pasta.

Ingredients:
- 2 cups romaine lettuce
- 2 cups cooked penne pasta
- 1 cup cooked chicken, chopped
- Caesar salad dressing
- Parmesan cheese
- Basil
- Parsley
This is how much lettuce, pasta and chicken I used for 2 nice sized servings. I don’t think it’s entirely a good idea to put amounts on a dish like this. If you’d like more lettuce, less pasta then do it. If you aren’t a fan of parmesan cheese or you don’t want chicken, take them out. Change it up as you see fit, this is just a nice guideline. You could easily use store-bought chicken strips or leftover chicken for this. I cooked mine up right before serving, with just a little salt, pepper, garlic and Italian herbs. Croutons are a a great topping, we just didn’t have any when I made this. And one more note for your pasta, it’s best to cook it al dente so there is still some bite to it.
This recipe is so simple! I took a large Tupperware and put in one serving size of lettuce, pasta, chicken and herbs. I didn’t want to add the cheese or dressing because I didn’t know how much either of us would want. You could definitely add those in to your tupperware to mix it all up together if you’d like. So, I put the lid on the Tupperware and shook it up real well. Once everything was mixed, I piled it on my plate and topped it with my parmesan cheese and Caesar dressing. And that’s all it takes!

I absolutely loved this chicken Caesar pasta salad! It’s healthy but more filling than just an ordinary salad. Not to mention, it is super delicious! My husband liked it so much, he ate it for lunch and dinner the next day. Don’t take my word for it, give this a try!!
