Creole Shrimp

This dish is not only delicious and easy, but it is pretty darn healthy as well. It’s not very Creole, but I couldn’t think of another word to describe it! This dish has great flavor and is super fresh. The best part, in my opinion, is that it doesn’t take much to fill you up. I’ll make this again any day, that’s for sure. Give it a go!!
Ingredients:
- 2 strips turkey bacon
- 1 onion, chopped
- ½ green bell pepper, chopped
- 2 cloves garlic, minced
- 16 ounces chopped tomatoes
- Pepper
- 1 teaspoon Worcestershire sauce
- 1 teaspoon (OR MORE!!) hot sauce
- 1 pound shrimp
- Green onions
- Basil
Feel free to use regular bacon if you like. Also, I used a combination of canned and fresh tomatoes; I think it made the sauce perfect. You can also use more bell pepper, onion or garlic if you want. And of course, use as much hot sauce as you like, including none at all. It just adds a tiny bit of heat. I would have loved it if I could have added much more, but my husband isn’t one for spicy food.
Cook your bacon in a large skillet. Once it is crispy, place it on a towel to drain. Keep about a tablespoon of the bacon fat. Add in your onion and bell pepper. Cook for about 5 minutes and then add in the garlic. I cooked my bell pepper for a shorter amount of time because my husband likes it with a bit of a crunch, but feel free to cook it shorter or longer to get the texture you like.

Add in the tomatoes, pepper, Worcestershire and hot sauce. Bring the sauce to a boil and then reduce it to a simmer. Cook this for about 20 minutes.

Chop up your bacon while this is cooking.

Next, add in the shrimp and chopped bacon. Cook all of it for about 10 minutes, or until the shrimp are fully cooked.

Serve this awesome Creole shrimp over a big bed of rice and top it with some of the green onion and basil. They add a great finishing touch. It was full of flavor and was very filling. I can’t wait to make this again – it really is a wonderful dish.
