Lemon Garlic Marinade

I think this lemony garlic marinade is perfect for the hot summer weather. It is very light, but has wonderful flavor. I normally use this for chicken, but I think it would go great with seafood as well. Don’t let that limit you, try it with anything you like!

Ingredients:

  • 1 pound meat
  • 3 (or more!) cloves garlic, minced
  • 2 to 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ¼ cup water
  • Salt
  • Pepper

You could definitely use more or less of the lemon and garlic. It’s up to you and how much of their flavors you want. Normally I use quite a bit of garlic, but I am a pretty big fan! Also, feel free to add anything else you’d like to this marinade – make it your own! Herbs would go great.

Combine the ingredients in a Ziploc bag or small baking dish. Add your meat, stirring/shaking/turning to coat. Let it marinate at least an hour, but I don’t recommend more than over night. Add some thinly sliced lemons to your meat while it is cooking for some added pizzazz! I also usually add some lemon pepper while the meat is cooking, but that’s just my own personal touch.

I think that this lemon garlic marinade (with any meat) goes very well with some baked potatoes and fresh vegetables. I absolutely love the flavor! You can top it with some fresh herbs as well – it looks so beautiful!
