Mini Frittatas
These little frittatas are light, fluffy and very delicious. You can customize what goes in them, even down to each single muffin tin. Everyone can have their frittata the way they want! The only breakfast food I will cook is one that is easy to make, so they’ve got that going for them as well. You could also have these for lunch or a snack, they are pretty versatile.

Ingredients:
- 3 tablespoons butter, melted
- ¼ pound cheese, finely chopped or shredded
- ¼ pound meat, finely chopped
- Splash of milk
- Salt
- Pepper
- 8 eggs, beaten
- Any vegetables of your choice
For this recipe, I used cut up lunch meat, but you could really use anything, such as sausage, leftover chicken, bacon, etc. The cheese is also up to you, whatever you like! You can use any type of vegetables you want, but don’t go overboard (like I almost did!) and fill the muffin tins too high. You don’t want them to overflow when you add the eggs. I normally use mushrooms, onions and sometimes a little spinach. Use whatever you prefer!
Preheat your oven to 350°. Next, brush you muffin tins with the butter. Don’t be afraid to use a lot, I think this gives them a nice flavor and a little thin crust. You could definitely just use cooking spray if you prefer. Divide your meat, cheese and any vegetables you are using in your muffin tins. You can really make each little muffin tin unique! This is great if you are serving multiple people.
In a large bowl, beat your eggs if you haven’t already. Add in a splash of milk (as little or as much as you want – this helps make them a bit fluffier), as well as the salt and pepper. Now you want to fill each muffin tin as evenly as possible.

Bake these little frittatas for about 12 minutes, or until they are brown and puffy.
I love these mini frittatas because you can personalize them very easily. They are very simple to make, so I love cooking them for breakfast. We also have them for a snack sometimes – you can really change their style by adding different ingredients.

I just used lunch meat in these, but when I use sausage or bacon, I always cook it before putting it into the muffin tins. On that note, bacon is totally my favorite to put in these!
These would be perfect for my family of 6. Everyone gets what they want!
