My Green Bean Casserole

When I met my husband, he wouldn’t willingly eat any vegetable besides corn. It was a rough transition at first because I am a huge vegetable fan. I finally talked him into trying green bean casserole and he has been begging for it ever since! I used to make it from the directions on the back of those fried onion cans. That is a good way to make it and I have no complaints about it, but I have perfected my green bean casserole over the years. I cater it to the things my husband likes so I can keep him wanting more of this stuff! This green bean casserole is creamy and absolutely delicious… give it a try!

Ingredients:

  • 2 cans of cut green beans
  • ¼ cup chopped onion
  • ½ cup sour cream
  • 1 can cream of mushroom soup
  • ½ cup cheese
  • Pepper
  • 14 Ritz crackers
  • ½ cup melted butter

First some notes, as always! You can use any kind of cream soup you would like. It’s all about personal preference for sure. Also, I use this kind of cheese:

But you can use any type you have on hand or that you think would go well with this!

Preheat your oven to 350° and coat a baking dish with cooking spray. You can use an 8×8 baking dish or a round 2 quart baking dish. Mix together all of the ingredients except the Ritz crackers and melted butter. Make sure you drain your cans of green beans before you mix them. Combine everything well and pour into your baking dish.

Take your Ritz crackers and crumble them up into your melted butter. I use anywhere from 12 to 16 crackers, but use however many you see fit! Spread this mixture on top of your green beans. You can spread it over the entire top or make a design, anything works. I usually go around the edge with it.

Bake this for about 40 minutes. It will be bubbly and your crackers will be browned.

Most green bean casserole recipes use milk, not sour cream, but I find it makes the dish so much creamier. Also, I was never a big fan of those fried onions. I much prefer this Ritz cracker topping. It’s absolutely perfect!!
