My New Favorite Soup via Healthy.Happy.Life.

I absolutely love sharing recipes with all of you. Knowing that I can post my recipes online gives me inspiration when I am cooking and I always seem to come up with new, awesome ideas. My favorite thing to do is to tweak recipes. I take things I stumble across online or find in my endless stacks of old, handwritten recipes/ripped out pages from magazines. I will make something once and then find a way to make it better. Honestly, my favorite part about doing this is finding those rare gems… the recipes where I take a bite and think ‘Wow, PERFECT!’ I found one of those recently and wanted to share it with you guys! Now, these aren’t my pictures. I’m sure you noticed that, but I have an excuse! Every time I sat down to eat this soup I thought, hmmm I need a picture. I’d take a bite and think, ok I’ll get it next time! HA! Next time never seemed to come, which is probably better for you guys because Kathy over at Healthy.Happy.Life. takes the absolute BEST pictures ever.

So don’t get all ‘but it’s all green… and peas?!’ I wouldn’t lead yall in the wrong direction, I promise. Pea soup is a treasure that most people ignore! If there was EVER a pea soup recipe you should try, it’s this one. The only thing I can recommend: Don’t change a thing! It’s so perfectly delicious. What makes this soup so special? I think it’s a combination of a few great ingredients. The one ingredient that I feel makes the biggest difference in this soup is nutritional yeast. You may not even know what it is, but it’s worth checking out. In short, it’s a yellowish colored powder-like substance that has a sort of smokey, nutty, cheesish flavor. It’s a staple I think for any vegan because it is a great source of vitamin B12, something vegans need to keep track of. In this soup, it adds this perfect flavor to what might be a somewhat boring soup otherwise. This soup is AMAZING. Seriously. It’s full of great stuff for you and your belly will thank you after you chow down, trust me! Pair it with some buttered bread, like in the pictures, and you have such a wonderful meal. I have been eating this soup like it’s going out of style and I don’t plan on stoppin anytime soon! : )
