Pumpkin Spice Cashew Cheese Dip via HappyHealthyLife
Diptacular. Diptastic. Dippity Doo Da Day! I promise I’m not crazy – I am just really into dips this week! I adore dips of any kind really, but I am always for trying something new. A while back, I found this crazy awesome dip over at Healthy Happy Life (she is the creator of The Lunch Box Bunch). Kathy is such an amazing cook and her pictures seriously make me drool all over my keyboard. She is vegan and so her recipes are vegan friendly, which I of course love! When I was making the transition into becoming a vegan, I lived on her site! It was only natural that I try this dip because, well, it’s made with pumpkin. You can pretty much guaruntee that if it has pumpkin in it, I’m eating it! I sure didn’t expect to love it this much though – it’s truely awesome!!
You really have to check out the recipe over on her site (even if it’s just for the droolworthy pics!). She goes into so much detail – one of the many reasons I love her blog! - and it’s super helpful. I will say that I have made this recipe about 5 times, changing a little something with each trip to the oven! My favorite combination is this:
- 1 can pumpkin (15 oz, NOT pumpkin pie mix)
- 2 cups raw cashews (soaked and drained)
- 1/2 cup water (use the soaked nut salted water)
- 1/4 cup agave
- 2 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 cup orange juice
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp cayenne (I like it spicy!)
- 2 packets equal
