Ramen and Broccoli Soup
My pantry is packed with Ramen. I really don’t know why to be honest, we never eat it! I was going through our piles and piles of food to see what I needed to cook and I decided to try something new with all the Ramen. It’s not like Ramen is terrible for you, it’s the seasoning packet that does you in. I really wanted to make something with flavor, but that wouldn’t make me feel like I was eating a jar of salt. I came up with this soup, which is wonderful because you could easily change it up (different vegetables, seasonings, meat). I love recipes like that! So try this out of you have some packages of Ramen eating up your cabinet space! Super simple and totally delicious. YUM!
Ingredients:
- 1 package of Ramen (discard the seasoning packet)
- 3 cups broth (whatever kind you like or have on hand)
- Broccoli
- 1 chicken breast
- Seasonings of your choice
This is so simple, seriously! I wanted to give a few notes on how I normally make this. You don’t have to follow how I make mine, just a sort of guideline or a way to try that will inspire new options! I use low sodium vegetable or chicken broth because that is what I keep on hand. If you make your own, that would be great! I usually use at least broccoli, but I also like to add carrots and mushrooms. The combinations are endless! As far as spices go, I like using ginger, garlic and pepper. I also add a little soy sauce to my broth. I have tried other ways of preparing this dish, but this is my absolute favorite way! Now, let me say that 3 cups of broth is perfect for me. It makes a nice soup, but doesn’t leave a ton of liquid left when you are done eating. Adjust as needed to get the consistancy you like.
Bring your broth to a boil and then add your Ramen. Depending on what kind of vegetables you are adding, you may want to add them as well. I normally will add in my broccoli and carrots when I add in the Ramen. Cook this until your noodles are done and your vegetables are as soft as you’d like them.
While the Ramen is boiling, I normally toss my chicken on the George Foreman, along with some mushrooms. I let the mushrooms cook for just a couple minutes and then add them to the soup when it is done. I slice up the chicken and place it on top of this veggie packed soup, along with some sesame seeds (which I have apparently become slightly obsessed with!).
