Raspberry Chicken

I am all about trying new things, so when I saw some fresh, delicious raspberries at the store, I knew I had to do something with them! I decided to make a marinade using this awesome Raspberry Hazelnut dressing that I absolutely adore (I have a slight obsession with anything including Hazelnuts… because my name is Hazel.. weird I know, but they are great!). It turned out so wonderful! I served it over a salad and the raspberries were so fresh. It really made a simple salad something special. This is a super easy recipe and it’s a great summer food that could be served for dinner or lunch.

Ingredients:

  • ¼ cup raspberry vinaigrette
  • ¼ cup red wine
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 4 chicken breasts
  • Raspberries

This recipe is so simple, but the flavor is totally wonderful! All you need to do is combine all the ingredients (MINUS the raspberries) in a small baking dish or Ziploc bag. Mix it up well, cover/close and let it marinate for at least an hour, but no more than 6. Feel free to turn/shake it often. After my chicken was done marinating, I grilled it up. It had such a wonderful color and the smell was great!

I served this delicious raspberry chicken over a simple salad with the fresh raspberries and some slivered almonds. It was soooo light and refreshing, I just loved it! I think this might go good with pasta or rice as well if you make a nice little sauce for it. So wonderful, I really think you guys would love this!

My husband still thinks it is weird to put fruit with meat, even though he loves the dishes that have both! Do you like to try fruits with your meats?
