Shredded Salsa Chicken
I figured now was a great time to post this recipe, since I plan on making it again tomorrow! My grandparents gave me this massive bucket full of bell peppers (they have a pretty large garden full of awesome veggies they love to share with me! I am so very grateful!) and I wanted to make something with them ASAP. Check it out:

Needless to say, I will probably be making mine with extra bell peppers this time around! Anywho, I really love this recipe. It’s super simple, like all slow cooker meals, and it has a ton of great flavor. Be sure to give this yummy recipe a try!
Ingredients:
- Chicken
- Bell peppers
- Onion
- Salsa
- Taco seasoning
Quick note! I just want to share this post, as I do everytime my recipes use taco seasoning, because it’s awesome. I am so glad I found it because I much prefer this homemade seasoning to store bought (especially after looking at the ingredients!). Brown Eyed Baker – Homemade Taco Seasoning Mix.
Ok, so I am not going to use any measurements because I feel that’s totally up to you. Sometimes I like to make it with hardly any chicken and packed with veggies, other times I like to fix it the other way around. Throw in however much you like and as always, feel free to take away or add to the ingredients to get it just the way you want it! The one thing I will say is to make sure you use enough liquid to keep the chicken from getting dry. I normally use a couple chicken breasts and then enough salsa to cover them.

All you need to do is toss everything in your slow cooker. I normally cook mine on low for at least 6 hours. I like to cook my slow cooker meals on low because⦠well, I like them slow cooked! I love being able to let the smell fill up my entire house. So after about 6 hours, I will shred the chicken. All I do is just take a fork and pull it apart. If you find this difficult, you can pull the chicken out and place it in a bowl. Then, use two forks and pull the chicken apart. Just toss it back in the pot when you are done shredding it.

Once it is shredded, I let it cook for about an hour longer. I don’t think it’s totally needed, but I feel like the chicken has even more flavor when I do this.

Normally we put this slow cooker salsa chicken in our burritos (you could totally use it for my Baked Burrito recipe!), but sometimes we just serve it over rice and black beans. It’s a very simple recipe that I think I’ll be making for a long time!
