Sweet Potato Fries

I decided to post this recipe because, well, I had some of these for breakfast! Yes, really. I seriously love sweet potatoes and this has quickly become my favorite way to fix them (ok, regular baked sweet potatoes is still a very close second. but still!). I prepare these pretty much the same way I cook my regular potato baked fries, but since I get to eat all of these myself, I get to play around a lot more with the seasonings! Check out how easy they are to make!

Ingredients:

  • Sweet potatoes
  • Enough Olive Oil to coat
  • Seasonings of your choice!

I seriously love how all of my recipes are so vague, but really, it’s too simple to get all complicated! Sweet potatoes vary in size, but it’s normally tough for me to eat more than half of a ‘regular’ sized sweet potato when combined with a meal. Keep that in mind when you are making these! They are fine reheated, but not nearly as good as right outta the oven, so I like to only make enough for one sitting.

Preheat your oven to 450 and line a baking sheet with aluminum foil (be sure to spray it with cooking spray). Peel your sweet potato(es) and then slice em into fry-shapes – like I did over here for my herby garlicy fries. Sweet potatoes can be hard to cut, so be careful. Throw your slices on the foil and toss em with your spices and olive oil.

You really can do any combination of spices that you want, but I wanted to share my two favorites. The first is my spicy mix which I normally use and they go great with pretty much any meal. I use a combination of the following: cumin, chili powder, red pepper flakes, onion powder. I don’t normally use salt, so feel free to add it if you want it! These are spicy and totally delicious! My second favorite combination is super simple: cinnamon and sugar! That’s right. That’s the combo I had for breakfast with a cup of coffee and they were amazing. I enjoy it because it’s not like the normal cinnamon sugar flavor. Since the sugar is baked, it turns super awesome and helps make the fries a little more crunchy. I love it!

Feel free to experiment with spices – it’s all about what you like! Once you have them spiced and olive oiled up, bake them for about 15 minutes. They won’t get as crunchy as regular potatoes, so keep that in mind. I normally bake mine for longer than 15 minutes to try my hardest to get in some crunch. You can also flip em or rotate em to bake them more evenly, but mine always turn out great without any moving.

These bad boys are so delicious! Serve them with burgers or your favorite main course… I really think they go great with everything (especially yummy black bean burgers)! You may even go a little crazy and eat them for breakfast like me : )
