The Best Eggplant EVER.
*Ok so first off, I know I have been away a while. No worries – I am back! I had a few pictures issues and lost a bit of motivation because of it. Luckily, cooking amazing food brough it right back. Enjoy!*
The hubby and I decided it was time to grill. The weather was so nice and we hadn’t cooked anything on the grill in so long. He picked up some chicken legs and I grabbed the most massive eggplant I have ever seen, along with a few ears of corn. Everything rocked, but I must say… this is the best way I have ever found to cook eggplant! It really was perfect. It has wonderful flavor and it was just totally delicious. If you plan on firin up the grill anytime soon, give this a go… my husband even stole some of mine, so I know it’s gotta be good!
Ingredients:
- 1 eggplant (do not peel it!)
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- garlic
- dried herbs
- salt
- pepper
Vague, I know, but it’s up to you! As far as the olive oil and vinegar go, it really depends on the size of your eggplant as to how much you should use. I had this crazy big eggplant and used just a bit more than what is listed. For the garlic and herbs, it’s really just what you like! I used about a tablespoon or more of garlic powder and pinch of my favorite herbs (parsley, oregano, basil). I went a little light on the salt and pepper because I didn’t think it needed much, but use however much you are comfortable with or like the taste of!
First you want to slice up your eggplant like so….
This was the very first time I cooked eggplant without peeling it first. It seemed weird, but I read it came out great this way… and it did! The edges were a little crispy, which is something I love. By all means though, if you don’t think you would like the eggplant unless you peeled it, go right ahead! Whisk together the other ingredients and brush them on your eggplant.
I let mine sit for about 10 or 15 minutes after I coated them. I wanted to make sure they absorbed the flavors. Toss these bad boys on your grill, flipping after about 10 minutes (or more depending on how hot your grill is).
I let mine sit for about 10 to 12 minutes per side, which came out perfect for me (as you can see in the pic!). I ate mine as is, but I think they would be great sliced into smaller pieces and served over a salad or maybe even over some rice/pasta.
I would have taken more pics, but I was so hungry and they were so good, that I literally inhaled them! My husband even stole a couple slices as well, so I don’t feel too guilty about it : ) Really though, if you even remotely like eggplant, you really should try this. The flavors are just amazing and they totally transform the eggplant into awesomness!
Update! I reheated the tiny bit of leftovers in the oven and threw it in between some bread. Best sandwich ever!! Try it like that if you ask me : )
