Turkey Meatballs

Since my last posted recipe is for my delicious pasta sauce, I figured it would be a great time to show you guys my turkey meatballs. These things are so moist and absolutely delicious! They are great in a pasta dish or by themselves. I prefer them over beef meatballs any day of the week!

Ingredients:

  • 1 small onion
  • 1 egg
  • ¼ cup bread crumbs
  • 3 tablespoons ketchup
  • 2 tablespoons dried parsley
  • 3 to 4 cloves of garlic, minced
  • ½ cup parmesan cheese
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 pound ground turkey
  • Olive oil
  • 3 cups pasta sauce

I never keep regular bread crumbs around, only panko bread crumbs. I love them by the way, great with so many things! Sadly, this is not one of those things! Make sure you use regular bread crumbs. It will keep your meatballs together much better.

You want to cut your onion up very finely. Now mix together your onion, egg, bread crumbs, ketchup, parsley, garlic, cheese, salt and pepper. Mix these up first, before adding your turkey. It’s minor, but it makes it so much easier to evenly distribute all of the ingredients.

I added this picture so you could see my ‘Rachel Ray trash bowl’ in the background! Ok, so next, add in your turkey and mix it well. Form into your meat balls. In these pictures, I made larger meatballs and while I loved them, I think it’s much easier to make them smaller. So my suggestion is 1 inch in diameter, but they will work no matter how big or small you want to make them. Place them on a plate, foil or dish.

Heat a few tablespoons of oil in your skillet over about medium to medium-high. Add your meatballs…

Saute until brown on all sides. You want to make sure not to burn them, but you also need to make sure they are cooked all the way through. Once they are done, transfer them to a bowl or plate. Turn off the head and add your marinara sauce to the skillet. There is so much flavor in the juices just sitting in your skillet… you want that flavor! Mix it up a bit and then return your meatballs to the pan. Turn the heat back on to about medium low. You want to get a slight simmer going, thickening the sauce a bit and blending in all the wonderful flavors. Let this cook for about 15 minutes.

Serve these turkey meatballs over your favorite pasta or with toothpicks. These taste wonderful and I absolutely love them!
