Un-Fried Rice
This is my healthier version of fried rice. To be honest, I’ve never made fried rice the regular way! I really love making my fried rice this way. It’s so easily customizable too, you can really just add whatever vegetables you want. My husband looooooves this recipe too, so I make this very often. Normally, I add some shrimp to his fried rice and serve it with a side of broccoli. Simple and delicious – works for me!
Ingredients:
- 2 cups of cooked rice
- 2 eggs
- 2 carrots, chopped
- 1 celery stalk, chopped
- 1 small onion, chopped
- 1/2 cup peas
- 1/2 cup corn
- 2 tablespoons soy sauce
- Dash of ginger
- Water or Rice Vinegar as needed for moisture
- pepper
The first thing I want to note is the rice. If you use fresh cooked rice, I’ve found it’s a bit more difficult to make. The rice is stickier and you’ll need more liquid. I use leftover rice when I make this and I think it works much better that way. And remember, use whatever vegetables you want! I just grab what I have on hand and throw it in.
First, beat your eggs and cook them in the pot you want to cook the rice in (a wok is great, but any pan works fine). Make a little omlet and transfer it to a plate for later. Add in some cooking spray and toss in your chopped vegetables.
You could use olive oil if you wanted, but I normally use some seasoned rice vinegar to flavor the veggies a bit. Let them cook until they are tender crisp. Cut up your omelet and add it to the pot, along with your peas and corn. Last, add in the rice, soy sauce, ginger, and pepper. I have never really measured the soy sauce. I just add and taste, add and taste. Also, I don’t add salt because soy sauce is normally pretty salty already, but if you think it needs salt, add it! Be sure to add liquid if it’s needed, either water or rice vinegar.
That’s it! Simple, right?! This un-fried rice is a regular around our house. Serve it with shrimp or maybe some garlic-honey pork chops. I like to serve mine with a big side of steamed broccoli – delicious!!
