Vegan Banana Pancakes

I am not the biggest pancake fan, so the fact that I loved these so much says a lot! These pancakes are moist, delicious and the perfect amount of sweet. I have learned a lot of ways to substitute eggs and oil in baking recipes lately and these pancakes are a great example of how wonderful things can still taste without them! This is a very simple recipe and is great if you have an extra ripe banana or two sitting on your counter. For the non-vegans out there, you can most definitely replace the soy milk with regular milk. I found this awesome recipe over at SparkRecipes (right here) though it originally came from a wonderful cookbook called How It All Vegan! Check em both out!

Ingredients:

  • 1 cup flour
  • 2 teaspoon baking powder
  • 1 banana, mashed
  • 1 1/4 cups soy milk
  • 1 tablespoon sweetener

First you want to mash your banana up in a large bowl.

Next, add the other ingredients and mix well. For a sweetener, you could use sugar, honey, agave or a sugar substitute. I think brown sugar would even work well. I think the bananas add a bit of sweetness that makes theses absolutely perfect, but if you think you want more sweetness, feel free to add more!

Spray your pan with cooking spray and get to makin those pancakes! I am pretty much the worst pancake maker ever, so if mine can come out decent, anyone should be able to handle them! From the comments I read on SparkRecipes, some people said to watch them carefully and make sure they didn’t burn. I didn’t have any issues, but it’s something to keep in mind.

Flip your banana pancakes when they start to bubble like these. I normally make this into 4 servings, but it all depends how hungry you are and how big you make the pancakes! They also freeze pretty well which is very nice. Sometimes I make a batch of these when my bananas are too ripe and freeze them so I can just pull em out for breakfast. I normally put them in the toaster so they get a little crispy on the outside!

I eat my banana pancakes with some slices of bananas on top and sometimes a tiny drizzle of agave. The hubby on the other hand can never have enough syrup – just look at his swimming pancakes!

Give these tasty vegan banana pancakes a try! And feel free to add anything that you think would work well (some suggestions I read: cinnamon, vanilla extract, whole wheat flour instead of white, etc) because it’s all about having fun in the kitchen. These are super simple and I totally adore this recipe.
