What Did You Cook This Week?
I love sharing recipes with all of you, but maybe you have some you’d like to share with me as well! I figured today would be a great day to share the recipes I cooked this week and maybe you could share some of yours too.
Earlier this week, I made my Baked Parmesan Tilapia with Green Bean Casserole + corn. My husband loves the green bean casserole so I normally make it once a week or so. The tilapia is one of his favorites too.
The one thing I can say I make every week (normally multiple times a week) — my Herb Garlic Baked Fries. My husband eats these with everything! They are really simple so I never mind making them, but I don’t know if he could live without them!
I also made my Creole Shrimp him this week. It’s such a healthy recipe and a great way to use up all the bell peppers my grandparents give me!
Today I will be making him this Smushed Sausage sandwich. Another great thing that comes from my grandparents – homemade sausage! So this recipe is pretty much a regular as well. I will also be making my Pasta Sauce today and letting it simmer for a few hours. Tonight he will throw together his very own special lasagna. I make sure to add TONS of veggies to his sauce because it’s the best way for him to eat them! He makes this lasagna and freezes it in single servings so he always has a meal handy.
For me this week, I made the Sweet Potato Fries (of course!) about 3 times! I normally make them when I also make the garlic herb fries for the hubby. One thing I make every single day is Oatmeal. Check out that post about all the different ways I fix up my oatmeal in the mornings. It’s quick, easy and always delicious!
I also had the best soup of my life this week – Vegan Pea Soup. On top of that yummyness, I made this awesome Spinach Dip that I almost ate all of in one sitting! It’s a great snack. I also made this super delicious cream cheese dip just by taking some cream cheese (I used Tofutti) and adding a little milk + garlic powder. It was awesome! The hubby and I ate it with some pita chips and completely devoured it. This week also included tons of fresh veggies and fruits and a couple salads just like this!
